Quick Winter Squash

1 squash (banana, butternut, hubbard or kabocha)

¼ cup water or fruit juice

Wash the outside of the squash with dish soap and water. Pat dry. Cut the squash into serving size pieces. Place the pieces, with cup side up, in a microwave safe dish. Sprinkle the water or fruit juice on the squash pieces. Cover and cook in the microwave for 10 to 13 minutes on high or until fork tender.

For acorn squash, cut into half, remove seeds and cook as directed above.
