Green Beans with Garlic This quick garlicky side dish is a delicious way to serve fresh green beans. 1 lb fresh green beans Wash the green beans well with water and a drop of dish detergent. Cut off green bean tips. Steam the green beans for 5 minutes, remove, then quickly chill them in a dish of iced water. Set aside. In a medium saucepan, sauté the onion and garlic in the oil for about 3 minutes or until soft. Stir in paprika and flour, cook mixture for 1 minute and then stir in the reserved liquid from the tomatoes. Stir until slightly thickened. Add the tomatoes and the green beans to the sauce. Mix well. Cook the mixture, stirring it over medium heat for about 2 minutes or until the green beans are tender-crisp. Makes 4 servings. |
