Sloppy Tofu Serves 41 tablespoon olive oil 1 medium cloves garlic, minced 1 medium green or red bell pepper, chopped 1 small onion, chopped 1 pound extra firm tofu, well drained and crumbled 1 tablespoons reduced sodium soy sauce 1 cup tomato sauce, homemade or canned 1 small can tomato paste 1 tablespoon chili powder ½ teaspoon cumin 1 whole wheat hamburger buns, split and toasted Heat oil in a large skillet over medium heat. Add garlic, bell pepper and onion. Cook, stirring often, until soft. Add the crumbled tofu and soy sauce and cook, stirring until tofu begins to brown. Stir in tomato paste and sauce, chili powder and cumin, mixing well. Cook, stirring, until heated through and well blended. Spoon onto toasted buns and serve.
